In Options > Preferences > UI you can also check the Double-click maximizes the plex box to be able to double click the plex background to maximize it (the 6.x and lower functionality).

When the plex is maximized the tool windows are hidden, allowing you to use all the screen estate for managing and arranging the plex. This is very useful for Expanded or Outline views.

The option to open notes in separate windows can be very useful when the plex is maximized.

Presentation Mode hides the toolbar at the top and the surrounding Windows edge (on Windows), giving you a bit more real-estate. This is useful for presentations, or maximizing the full real-estate of your screen. Maximizing the plex works in presentation mode also.

To enter presentation mode choose Window > Presentation Mode, or you can assign a keyboard accelerator.
