Beta Carotene: may "protect cells from free radicals, the by-products of fat metabolism that can turn a healthy cell cancerous"
take pix of table on page 181
Bioflavinoids: "jack-of-all-trades nutrient";
They "increase the anti-cancer activity of certain enzymes found in our skin, lungs, gastro-intestinal tract, and liver."
"The enzymes also help convert fat-soluable carcinogens to water-soluable form, so they can be safely excreted from the body."
Bioflavinoids: "may also protect thebody from cancer-causing effects of air polutants such as benzo(a)pyrene."
Bioflavinoids: "increase the body's absorption of Vitamin C"

Nitrites = "food additive"

Vitamin C: "combines with nitrites in the stomach to hinder transformation of nitrosamines into carcinogens"
from page 179:
Heat and water from canning depletes Vitamin C and A.
Citrus Juice:
- One cup of fresh squeezed orange juice contains about 120 milligrams of Vitamin C. A medium orange might contain about half that much.
- Frozen juice is second best in terms of Vitamin C.
- "The container counts. Polystyrene bottles and wax-coated paper cartons are the worst for preserving vitamin C, because they are not air-tight and allow light in. Both oxygen and light contribute to the decay of Vitamin C. Airtight glas jars are a little better. Enamel-lined cans and tin cans are better still. The best containers are frozen concentrate cans-second only to the natural skin of the fruit!"
- "keep your cans of citrus juice in the refrigerator if possible; if not, keep them in as cool a place as you can"
