Marc

Marc is a Pomace Brandy made from the leftovers from winemaking. The Au'Kael do not have much of a tradition of distilling until modern times, and wine was sufficiently a luxury to not be made into brandy. But Pomace, a waste product, could be sacrificed to make it. They adopted the western Avean word "Marc" to describe the product, even though modern Au’Kael marc is much different from more mass-market varieties. And wherever there is a sizeable Au'Kael diaspora population, Marc has grown in popularity, as they seem to have an affinity for it.

Traditional western Avean marc is most often infused with assorted bitter and aromatic herbs and spices to impart flavor. (Ouzo, Sauza) But amongst the Au’Kael, the most famous variety is the version made with Blackthorne (Sloe) and other herbs and slightly sweetened with honey. (Basque Patxaran)
