Jerky Stew (Char'ki Kol)
A stew made by simmering pieces of various dried, cured, smoked, and salted meats, along with hearty greens, like Kabak leaves, stewing for a long period of time in order to rehydrate. Often served with some sort of bread or scoop of rice in order to soak up the flavorful pot liquor.
(Collard Greens, Charquican/Jerky Stew, Saag, Linguisa Stew)
- Afyon-Style: The stew is usually chunkier, with larger hunks of meat and the vegetables chopped coarsely. (Azorian stew)
- Tyrian-Style: All ingredients tend to be chopped finer, and the greens in particular are almost creamed. (Saag)
