CHENEY – A new Mexican restaurant has opened in Cheney, bringing a menu of traditional dishes and a family-run approach to the community.

Tacos El Sol held its grand opening April 11 at 1204 First St., in the building that previously housed Birrieria Tijuana, which closed earlier this year.

The restaurant is the second location for the business, which has operated for years in Spokane. According to previous reporting by The Spokesman-Review, the restaurant is owned by Oscar Escamilla and Irma Zuniga, who began their business with a food truck before opening a brick-and-mortar location in Spokane in 2018.

The Cheney location began serving customers earlier in the week, with the grand opening marking its official debut.

The menu features a wide range of traditional Mexican dishes, including tacos, burritos, tortas, sopes and enchiladas. Specialty items such as quesabirria tacos, birria ramen and carne asada are also offered, along with combination meals and house specialties like menudo and pozole.

According to the restaurant’s website, Tacos El Sol focuses on providing consistent, high-quality food with a homemade style. Many menu items are prepared from scratch, including certain tortillas, salsas and tamales.

The interior of the restaurant will feel familiar to some customers. While the layout remains similar to the previous business, the space has been updated with a black-and-white color scheme. A salsa and toppings bar has been added across from the counter, and the restaurant features booths, arches and drink machines similar to its predecessor.

The restaurant is open daily from 11 a.m. to 9 p.m.

Tacos El Sol joins a growing number of dining options in Cheney, offering residents another place to eat and gather in the city’s downtown area.
