Stuffed Shells with Fermented Spinach Ricotta

This dish layers creamy, tangy filling into tender pasta shells, baked in a rich tomato sugo—perfect for fermentation matrices and seasonal rotation charts.

Inspired by the traditional Spinach & Ricotta Stuffed Shells, here’s a modular version adapted for wild greens and fermented elements.

🧪 Base Ingredients

🔬 Method

  1. Cook the shells: Boil until al dente. Drain and cool slightly.
  2. Prepare the filling:

Mix fermented ricotta, sautéed greens, garlic, lemon zest, cheese, salt, and pepper. Adjust texture—should be creamy but firm enough to pipe or spoon.

  1. Stuff the shells:

Fill each shell generously with the ricotta mixture.

  1. Assemble:

Spread tomato sauce in a baking dish. Nestle stuffed shells into the sauce. Drizzle with olive oil and sprinkle with extra cheese or wild toppings.

  1. Bake:

Cover and bake at 375°F (190°C) for 25–30 min until bubbly. Uncover for final 5 min to brown tops.

  1. Serve:

Garnish with pickled stems, wild herbs, or fermented chili oil. Serve warm with crusty sourdough or bitter greens.
