Celery Gratin
Celery Gratin is the sleeper hit of vegetable sides—creamy, savory, and unexpectedly elegant. It transforms celery from background player to center-stage comfort food. Here’s a hybrid protocol inspired by Taste of Home, Food Network, and Laughing Spatula.
🥬 Celery Gratin with Cheese & Crispy Crumbs
🧂 Ingredients:
- 8–10 celery ribs, trimmed and chopped
- 1 small onion, diced
- 2 tbsp butter (plus more for topping)
- 2 tbsp flour
- 1½ cups milk or half-and-half
- ½ cup heavy cream (optional for richness)
- 1 cup grated Swiss or Gruyère cheese
- ¼ tsp ground nutmeg
- Salt and pepper to taste
- ½ cup panko or fresh breadcrumbs
- Optional: celery leaves, thyme, chopped parsley
🔧 Instructions:
- Sauté the base
In a large pan, melt butter. Sauté celery and onion until just tender (about 5 min). Drain excess liquid and transfer to a greased baking dish.
- Make the cheese sauce
In the same pan, melt butter and whisk in flour to form a roux. Slowly add milk and cream, whisking until thickened. Stir in cheese, nutmeg, salt, and pepper.
- Combine and layer
Pour cheese sauce over celery mixture. Toss breadcrumbs with melted butter and sprinkle on top.
- Bake
Bake at 375°F (190°C) for 25–30 minutes until bubbly and golden. Garnish with celery leaves or herbs.
🌿 Optional Twists:
- Add fermented garlic paste or ramp vinegar to the sauce for wild depth
- Swap Swiss for smoked cheddar, vegan cashew cheese, or miso tahini
- Top with pine ash, nettles powder, or crispy shallots for texture
