Glycemic Load

Even though peas and corn are on the starchy side, they are high in fiber so in terms of glycemic load they are ok. All vegetables except potatoes are low glycemic load.
The reason fruit is considered low glycemic load is due to its fiber content. When you juice an orange you have lost that advantage.
Even whole grains, if eaten in large quantities, can cause acute elevation in blood sugar. Not as acute as the refined grains. Just go easy on portion sizes to control blood sugar
Examples of portion size: a slice of bread, ½ cup of cooked oatmeal is a serving
The more fiber that’s in a food the better its going to be for glycemic load. Another issue is particle size. Old fashioned rolled oats or steel cut oats have a much lower glycemic response. When you take oats for breakfast you can slow down digestion by adding something like walnuts or other healthy fat.
