🍺 Fermented Apple Ginger Beer
🧾 Ingredients (Makes ~1 gallon)
- 1 gallon fresh apple cider (no preservatives)
- 1-inch piece fresh ginger, sliced
- 1 cup sugar
- ½ cup ginger bug (see below)
🔬 Instructions
- Make Your Ginger Bug (3–5 Days Ahead):
Combine 1 tbsp grated ginger, 1 tbsp sugar, and 1 cup filtered water in a jar. Feed daily with the same amounts until bubbly and active.
- Mix the Brew:
Pour most of the apple cider into a wide-mouth gallon jar, leaving a few inches of headspace. Add ginger slices, sugar, and ginger bug. Stir well to dissolve sugar.
- Ferment:
Cover with cheesecloth and secure with a rubber band. Let ferment in a cool, dark place for 5–7 days, stirring daily.
- Bottle:
Strain and transfer to flip-top bottles. Leave at room temperature for 1–2 days to build carbonation, then refrigerate.
- Enjoy:
Chill and serve over ice. It’s fizzy, spicy, and slightly sweet—like autumn in a glass.
🧠 Tips & Variations
- For extra spice: Add cinnamon sticks or cloves during fermentation.
- For herbal depth: Try lemon balm, thyme, or wild fennel fronds.
- For sweetness control: Adjust sugar or use honey/maple syrup.
- For alcohol-free assurance: Keep fermentation under 7 days and refrigerate promptly.
