🍒 Ground Cherry Chutney
🧂 Ingredients:
- 2 pints ground cherries, husked and halved
- 1 small shallot or onion, finely minced
- ¼ cup honey
- ½ cup apple cider vinegar
- 1 tablespoon Dijon mustard
- ½ cup olive oil
🍳 Instructions:
- Prep the base: Heat a splash of olive oil in a large frying pan over medium heat. Add the minced shallot and sauté until soft and translucent.
- Add the rest: Stir in ground cherries, honey, vinegar, mustard, and remaining olive oil.
- Simmer: Cook gently until the ground cherries begin to soften and release their juices—about 10–15 minutes.
- Cool and adjust: Remove from heat and let sit for 10 minutes. Taste and adjust seasoning if needed (a pinch of salt or extra vinegar for brightness).
- Store: Transfer to a clean jar and refrigerate. It will keep for up to 2 weeks.
🍽️ Serving tip: Try it with goat cheese, roast chicken, or as a tangy spread on sandwiches.
🌿 Flavor twist: Add a pinch of ground coriander or red pepper flakes for extra depth.
