Rye Pasta Dough
Here’s a hearty, rustic Rye Pasta Dough recipe that’s earthy, nutrient-rich, and perfect for bold sauces or fermented toppings. Rye’s lower gluten content makes the dough more delicate, but with the right balance, it rolls beautifully and adds depth to any dish. This version is adapted from The Awesome Green and 101 Cookbooks.
🌾 Rustic Rye Pasta Dough (Hand-Rolled or Machine-Friendly)
🧄 Ingredients
- 1 cup rye flour
- ½–1 cup all-purpose or semolina flour (for structure)
- ½ tsp fine sea salt
- 1 large egg, beaten
- ¼ cup cold water (plus more as needed)
- Optional: 1 tsp olive oil for elasticity
🔥 Instructions
- Mix the Dough
In a large bowl, whisk together rye flour, semolina/all-purpose flour, and salt. Make a well in the center and add the beaten egg and water. Stir with a fork until shaggy dough forms.
- Knead
Transfer to a floured surface and knead for 8–10 minutes until smooth and elastic. The dough should feel firm but pliable—like the palm of your hand. Add water or flour as needed.
- Rest
Wrap in a damp towel or plastic wrap and let rest at room temperature for 30 minutes. This relaxes the gluten and hydrates the rye.
- Roll & Cut
Roll out thinly with a rolling pin or pasta machine. Dust with rye flour to prevent sticking. Cut into fettuccine, tagliatelle, or rustic strips.
- Cook
Boil in salted water for 2–3 minutes until al dente. Toss immediately with sauce or fermented toppings.
🌿 Optional Twists
- Infuse dough with wild herbs or fermented garlic paste
- Serve with miso butter, probiotic cashew crema, or adaptogenic pesto
- Use smoked salt or preserved lemon in the dough for depth
