Rapini & Chickpea Pasta
Let’s build a bold, bitter-bright, and protein-packed Rapini & Chickpea Pasta—a creative vegetarian twist on the classic Italian pairing of rapini and sausage. This version uses crispy chickpeas for texture and umami, and it’s perfect for layering into seasonal matrices or fermentation charts.

Inspired by Grab A Plate’s recipe, here’s a modular breakdown:
🌿 Rapini & Chickpea Pasta
🧪 Ingredients
- 8 oz pasta (penne, orecchiette, or shells)
- ¾ bunch rapini (broccoli rabe), trimmed
- 1 (15 oz) can chickpeas, rinsed and dried
- ¼ cup diced onion
- 2 garlic cloves, minced
- ¼ cup white wine (or reserved pasta water)
- 3 tbsp olive oil (divided)
- ¼ tsp red pepper flakes
- Salt & pepper to taste
- 6 tbsp grated Parmesan (optional)
🔬 Method
- Crisp the chickpeas:
Toss dried chickpeas with 1 tbsp olive oil and salt. Roast at 450°F (230°C) for ~30 min until golden and crunchy. Season with black pepper.
- Blanch the rapini:
Boil in salted water for 3–5 min until bright green. Rinse in cold water, squeeze dry, and chop into 3-inch pieces. Reserve the water for pasta.
- Cook the pasta:
Boil in rapini water until al dente. Reserve ½ cup cooking water.
- Sauté aromatics:
In a skillet, heat 2 tbsp olive oil. Sauté onion ~3 min, add garlic and red pepper flakes. Stir in rapini, salt, and pepper. Deglaze with wine or pasta water.
- Combine:
Toss pasta into skillet with rapini mixture. Add reserved water if dry. Top with Parmesan and crispy chickpeas.
