Pizza

Pizza

From Food Network Kitchens Making It Easy cookbook, p. 58

Ingredients

1 cup tepid water (about 100º F)

3 tablespoons extra-virgin olive oil, plus additional as needed

2 teaspoons sugar

1/2 teaspoon salt

3 cups all-purpose flour, plus additional for kneading

1 1/2 teaspoons active dry yeast (about 2/3 packet, see note below)

No Fuss Pizza Dough Directions

Stir water, oil, sugar, and salt in a liquid measuring cup until sugar dissolves. Whisk flour and yeast in a large bowl. Make a well in the center and add liquid. With a wooden spoon or your hand, stir flour into liquid to make a rough dough. Pull dough into a ball. Turn dough onto a work surface dusted with flour. Knead until dough is smooth and elastic, about 5 minutes, using a little flour if necessary to keep from sticking. Divide dough into two equal portions, form into balls, and put on a lightly oiled baking sheet. Brush tops with oil, cover with plastic wrap, and set aside to rise until doubled, about 45 minutes.

Assembly Directions

Preheat the oven to 425º F. Prepare toppings, sauce, cheese.

Roll out the dough: Dust work surface lightly with flour. Flatten a ball of dough. Press the edge with your fingers, rotating and stretching it into a disk the size of your pan. Transfer to a prepared pan. Repeat for each ball / pan.

Top with sauce, toppings and cheese. When oven is preheated, bake 10 or so minutes until bottom is brown and crust is looking cooked. If needed, place on broiling rack and broil for one or two minutes, watching carefully to crisp up cheese but avoid burning.

Serve with parmesan cheese.

Makes two medium pizzas, or four large portions for adults.

FYI About Yeast

A strip of Red Star or Fleischmann's Yeast contains three packets; each packet in the strip is considered one package. Each package contains 1/4 oz. or 2 1/4 teaspoons of yeast.
This is approximately 7 grams, or 11 ml. This is representative of all of the US brands.
